Recipe
3 or 4 chicken breasts
one bag of spinach ( I buy the gigantic one at Costco and then we use it for a week or longer.)
2 1/2 cups of white rice
one bottle of 5 Spice Chinese Chef Sauce from Trader Joes
one box of Corn Bread mix from Trader Joes (Marie Callendars also makes a good one.)
I bought bone in chicken with skin because it was only .99 a pound. It only took me a few minutes to cut the bone out and take the skin off. Put chicken breasts in large ziploc bag and pour 3/4 of bottle of Chinese Sauce in it. Spread around so sauce covers all of chicken. Marinate in fridge for at least 4 hours.
The picture looks kind of sloppy but it was really good. Both of my kids including my picky son loved it (except for the spinach.) Rod liked the rice and spinach but thought the chicken was ok. The guy just does not like chicken unless it comes from a fast food place with cows all over it by Kara's house.
