Recipe
2 pounds of ground beef
2 large eggs
1 cup plain dry bread crumbs
1/3 cup Worcestershire sauce
1/3 cup finely chopped onion
1/4 cup ketchup
1. preheat oven to 350
2. combine beef, eggs, bread crumbs, worcestershire sauce, onion and ketchup in bowl
3 shape into a loaf in baking or roasting pan
4. bake uncovered for 1 hour
Instead of making regular mashed potatoes I bought instant garlic mashed potatoes at Trader Joes. I've never made instant mashed potatoes before. I'll never make them again. One thing for sure they are instant. You boil water and milk and add the mix and after stirring off heat for about 10 seconds their done. They were ok but way off from the real thing. I think I was the only one that ate them.
I made baby carrots the way my son likes to eat them.....SWEET. After boiling them for 10-15 minutes I drain them in a colander and make a sauce out of butter, brown sugar and cinnamon. My mom always made them like this for Thanksgiving. It's a great way for me to get my kids to eat vegies. Rhett eats them like candy.
Overall the meatloaf tasted really good but again my meal was lacking in presentation. After the meals we have had so far this week I feel like next week we should just be eating salad. Only one picture to share. If you want to see some better pictures you can go here.
